Ingredients
2 1/2 cups roasted corn off the cob 4 Tbsp. vegan mayonnaise 1/4 cup fresh lime juice 1/2 cup minced red onion 1/2 cup chopped fresh cilantro, plus more for garnish 1 large jalapeno, deseeded, deveined and diced 4 cloves garlic, minced 1 tsp. chipotle chile powder 1 tsp. kosher salt, or more to taste 1/4 cup vegan parmesan cheese, optional 4 ripe, Fresh California Avocados, seeded, peeled and halved fresh lime wedges, for serving vegan feta cheese, for garnishInstructions
- Place the corn, vegan mayonnaise, lime juice, red onion, cilantro, jalapeño, garlic, chipotle chili powder, salt, and vegan parmesan in a bowl and mix well to combine. Taste and adjust seasonings if necessary.
- Divide the corn mixture and fill each avocado half with generous spoonfuls.
- Serve with a side of lime wedges, garnish with fresh cilantro and vegan feta, and enjoy immediately!
Variations: Feel free to swap out any of additional southwestern warming spices to your preference. For spicier tastes, keep the jalapeño seeds intact. For those sensitive to spice, feel free to adjust jalapeño accordingly.
Serving Suggestion: The elote mixture can be prepared ahead of time and chilled in the refrigerator. Since oxidizations happens relatively quickly, prepare the avocado right before serving and don’t forget to squeeze them with a bit of lime.
Beverage Pairing: Pair with your favorite southwestern themed cocktail or a refreshing iced tea to help cool the spice from the jalapeño (and summer heat!).
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
