Consider this the perfect meal for breakfast, lunch, or even a light dinner. It starts with crunchy toasted artisan bread topped with thin slices of ripe, locally grown California Avocado. Everything seasoning, the iconic bagel topper, adds bold flavor and crunchy texture to the creamy avocados. Soft-cooked eggs rolled in minced fresh herbs—any you have on hand will do—round out the flavor profile of this tasty toast. For extra protein (and decadence), consider adding a slice of smoked salmon or prosciutto.

4 large eggs, at room temperature 1/4 cup minced fresh tender herbs, such as chives, dill, tarragon, and/or parsley 4 thick slices artisan bread, toasted and warm 1 Tbsp. extra-virgin olive oil, plus more for drizzling 2 ripe, Fresh California Avocados, halved, seeded, peeled; each half thinly sliced 1 lemon, halved 1 Tbsp. everything seasoning
  1. Fill a small saucepan with 2 1/2 inches of water and bring to a boil over high heat. Reduce the heat to medium and lower the eggs into the water using a slotted spoon. Cook at a gentle simmer for 6 minutes.
  2. Meanwhile, fill a medium bowl with ice water and set aside. When the eggs are done, scoop them out of the water with the slotted spoon and transfer to the ice water to stop cooking.
  3. Place the minced herbs in a shallow bowl. Peel the eggs and roll them one by one in the minced herbs to completely coat the outsides.
  4. Drizzle the toasted bread slices with olive oil and fan out a sliced avocado half over each one.
  5. Drizzle the avocado with the juice of 1/2 the lemon and sprinkle with about half of the everything seasoning.
  6. Cut the herby eggs into quarters and arrange them on top of the avocado.
  7. Drizzle it all with more lemon juice and olive oil, and sprinkle with the remaining everything seasoning.

Variations: For extra protein (and decadence), consider adding a slice of smoked salmon or prosciutto.

Serving Suggestion: Serve with forks and knives.

Beverage Pairing: Cold brew coffee or rosé wine.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
