This loaded taco fiesta inspired charcuterie board is filled to the brim with all the best taco fixings to complete your taco night spread! The board is full of fiesta favorites like creamy guacamole made with fresh California Avocados, an easy flavorful corn dip and zesty grilled chicken.

Fiesta Avocado Guacamole 2 ripe, Fresh California Avocado, seeded, peeled and cubed 1/4 cup red onion, minced 2 Tbsp. cilantro, minced 1/2 jalapeno, stemmed and minced 1 Tbsp. fresh lime juice 1/4 tsp. kosher salt, or to taste Corn Dip 2 cups corn, fresh or canned 1/3 cup mayonnaise 1 Tbsp. melted butter 2 Tbsp. red onion, finely diced 2 Tbsp. cilantro, chopped 1 lime, squeezed 1/3 cup crumbled cotija cheese chili powder, to taste hot sauce, to taste 1 lb. boneless chicken thighs 2 Tbsp. taco seasoning 1 lime, juiced Taco Inspired Charcuterie Board with Fiesta Avocado Guacamole California Avocado Guacamole (see make-ahead recipe above) Corn Dip (see make-ahead recipe above) Grilled Chicken (see make-ahead recipe above) 16 street taco-sized tortillas 1/2 cup red onion, finely diced 1/4 cup radishes, thinly sliced 1/2 cup cilantro, chopped 1/2 cup tomato, diced 1/2 cup crumbled cotija cheese 1 cup chopped romaine lettuce lime slices, for garnish

Fiesta Avocado Guacamole

  1. In a small bowl, lightly mash avocados with a fork until they have reached desired consistency.
  2. Mix in red onion, cilantro, jalapeño, salt and lime juice. Add salt and taste test for more if desired.

Corn Dip

  1. In a bowl, mix together corn, mayonnaise, melted butter, red onion, cilantro, lime juice and cotija cheese until well combined.
  2. Transfer to a serving dish and sprinkle with chili powder and hot sauce, as desired.

Grilled Chicken

  1. Season chicken thighs with taco seasoning evenly on both sides.
  2. Heat a grill pan on medium high heat and cook each chicken side for 4-5 minutes or until cooked through to an internal temperature of 165 F. Let chicken rest for 3-4 minutes before slicing into strips.
  3. Drizzle with fresh lime juice before serving.

 

Taco Inspired Charcuterie Board with Fiesta Avocado Guacamole

  1. On a large serving board, arrange bowls of Avocado Fiesta Guacamole and Corn Dip on either side.
  2. Place grilled chicken pieces onto a small plate in the center of the platter.
  3. Place tortillas along one side of the board and the remaining ingredients into small separate bowls; place around the board.

 

Variations:

  1. Add in or swap out additional proteins and/or accouterments and additional corn chips for serving.
  2. Add one diced California Avocado to the corn dip.

Serving Suggestion: The board can be prepared ahead of time but keep cold ingredients chilled until ready to serve.

Beverage Pairing: Serve with a spicy margarita.

 

 

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
