I made up this recipe to have a unique way to serve my avocados for a cool summertime treat!
Avocado Dessert Whip
|1/2||cup heavy whipping cream|
|1/4||tsp.||pure vanilla extract|
|1||large ripe avocado, seeded, peeled, and mashed well with a fork|
|Slivered almonds, toasted and crushed for garnish|

In a large bowl, beat the heavy whipping cream, sugar, vanilla, and lemon juice with an electric whisk (or by hand) until soft peak forms. Add the avocado to the whipping cream mix and hand whisk until well blended. Refrigerate for 20 minutes to chill. Serve with berries and garnish with almonds.
