I made up this recipe to have a unique way to serve my avocados for a cool summertime treat!
Serves: 8
In a large bowl, beat the heavy whipping cream, sugar, vanilla, and lemon juice with an electric whisk (or by hand) until soft peak forms. Add the avocado to the whipping cream mix and hand whisk until well blended. Refrigerate for 20 minutes to chill. Serve with berries and garnish with almonds.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
There are lots of quick and easy recipes on this site. Some have more than 7 ingredients, but most can be prepared in 15 minutes or less. Even with simple recipes it helps to know how to store avocados before you use them and if you have any left over.
