I made up this recipe to have a unique way to serve my avocados for a cool summertime treat!
Avocado Dessert Whip
Ingredients1/2 cup heavy whipping cream 2 Tbsp. sugar 1/4 tsp. pure vanilla extract 1/4 tsp. lemon juice 1 large ripe avocado, seeded, peeled, and mashed well with a fork Slivered almonds, toasted and crushed for garnish
In a large bowl, beat the heavy whipping cream, sugar, vanilla, and lemon juice with an electric whisk (or by hand) until soft peak forms. Add the avocado to the whipping cream mix and hand whisk until well blended. Refrigerate for 20 minutes to chill. Serve with berries and garnish with almonds.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
