 Avocado Kale Caesar

Kale Caesar is quickly becoming a classic and here we have a unique twist that adds Fresh California Avocado to both the dressing and the salad. This creates a creaminess that really sticks to the kale leaves, delivering the full flavor of Caesar Salad in every satisfying bite.


Serves: 4
    Avocado Caesar Dressing Ingredients
  ripe, Fresh California Avocado, seeded and peeled
Tbsp.  olive oil
Tbsp.  lemon juice
  cloves garlic
Tbsp.  capers with brine
tsp.  Dijon mustard
1/2  tsp.  salt
    Water, as needed, for texture
    Kale Salad Ingredients
cups  curly kale, remove ribs, and torn or shredded into small pieces
cup  shredded carrots, packed
cup  cherry tomatoes, sliced
1/2    ripe, Fresh California Avocado, seeded, peeled and diced
cup  sorghum, (optional)

  1. Combine ingredients in a blender or food processor and blend until smooth.
  2. Add water or more lemon juice to reach desired texture.
