1/3 cup diced pineapple, fresh or canned 3 Tbsp. finely chopped onion 1 Tbsp. lemon juice 2 tsp. chopped fresh mint 1/8 tsp. salt 1/8 tsp. crushed red pepper flakes 1 ripe, Fresh California Avocado, peeled, seeded and dicedInstructions
- Combine pineapple with next 5 ingredients.
- Gently fold in avocado.
- Let chill 1 hour to marry flavors.
- Best served the day it’s made.
Serving Suggestion: Serve with plantain or tortilla chips or use as a tropical avocado spread for sandwiches.
