Fresh California Avocado combines with pineapple, onion and crushed red pepper for an easy-to-make tropical relish. It’s great on burgers and sandwiches and can also be used as an avocado salsa for chips.

Ingredients1/3 cup diced pineapple, fresh or canned 3 Tbsp. finely chopped onion 1 Tbsp. lemon juice 2 tsp. chopped fresh mint 1/8 tsp. salt 1/8 tsp. crushed red pepper flakes 1 ripe, Fresh California Avocado, peeled, seeded and diced
- Combine pineapple with next 5 ingredients.
- Gently fold in avocado.
- Let chill 1 hour to marry flavors.
- Best served the day it’s made.
Serving Suggestion: Serve with plantain or tortilla chips or use as a tropical avocado spread for sandwiches.
Beverage Pairing: A fruity rum cocktail.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
