Fresh California Avocados and roasted Hatch chiles give classic chimichurri a flavorful and creamy twist. It makes a delicious topping for grilled meats, vegetables and more. This avocado chimichurri also is a flavorful dipping sauce for fresh breads or toast.

Serves: 4

4 cloves garlic or equivalent garlic paste 1/2 bunch flat leaf parsley, leaves only 1 Tbsp. fresh oregano, optional 1/2 cup extra virgin olive oil 1/4 cup red wine vinegar 1/2 cup diced Hatch chile 1 ripe, Fresh California Avocado, seeded, peeled and cut into 1/4" dice 1/4 tsp. sea salt, or to taste 1 pinch red chile flakes, or to taste
  1. In a food processor or blender, pulse the garlic, parsley and oregano to chop and combine. Add the oil and vinegar and blend until smooth.
  2. Gently fold in the diced chiles and avocado.
  3. Season to taste with sea salt and red chile flakes. You may serve immediately but the flavor is even better if you let the chimichurri rest for about a half an hour at room temperature.

Serving Suggestion: Serve this California Avocado Hatch Chile Chimichurri sauce over grilled vegetables, beef, chicken or seafood. It’s also delicious for dipping fresh bread, spreading on toast and drizzling on sandwiches.

Beverage Pairing: What you serve with the chimichurri sauce may influence wine beverage pairings or consider sparkling water for a non-alcohol-based drink.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.

Editor's Note

For a chunkier avocado chimichurri skip the food processor/blender step. Finely mince the garlic and herbs by hand and just combine with the other ingredients.
