If you haven’t tried avocado as a dessert, you need to because it is a gamechanger! This avocado dessert recipe, California Avocado Coconut Sago, delivers the fresh flavors of sweet coconut and avocado in a creamy, luscious texture made with tapioca pearls.

Start cooking

Serves: 2

|
1/3 cup tapioca pearls (sago) 2 1/2 cups cubed ripe, Fresh California Avocado (from about 2-3 avocados), plus extra cubes for garnish 1 (13.5 oz.) can full-fat, unsweetened coconut milk, divided 1/4 cup sweetened condensed milk, plus extra for garnish 1/8 tsp. pandan extract (optional) 2 mint sprigs, for garnish
  1. In a medium pot, bring 5 cups of water to a boil. Add tapioca pearls (sago) and cook for 10 minutes with lid off until sago is translucent. Turn off heat and put the lid on; cover for 5 minutes. Drain the sago and rinse with cold water for 30 seconds to stop the cooking process. In a bowl, add sago and mix with 3/4 cup coconut milk, then chill in the fridge.
  2. While sago is cooling, add avocado, 1 cup coconut milk, condensed milk, and pandan extract to a blender and blend until smooth. Transfer the avocado mixture to a bowl and place in the fridge for at least 1 hour.
  3. In two glasses, pour alternating layers of the avocado mixture, then coconut sago mixture, then another layer of the avocado mixture. For garnish, top with cubed avocado chunks, one sprig of mint, and drizzle of condensed milk.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
