Pineapple provides the perfect counterpoint to the lush texture and subtle, nutty flavor of California avocado in this versatile relish. Serve it with grilled meat, poultry or fish or layer it on a turkey, ham, or cheese sandwich.

1/3 cup lemon juice 4 California Avocados, cut in 1/4-inch dice 12 oz. pineapple, cut in 1/4-inch dice 6 oz. finely chopped onion 1/4 cup chopped, fresh mint 1 tsp. salt 1/4 tsp. crushed red pepper (optional)
  1. Gently fold lemon juice into avocado.
  2. Fold in remaining ingredients.
  3. Chill 1 hour to marry flavors.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
