Wonton Cups: Oil or cooking spray 12 wonton wrappers 4 oz. sushi-grade bluefin tuna, minced finely 1 Tbsp. sriracha (or more depending on your spice preference) 2 Tbsp. soy sauce 1 tsp. sesame oil 1/2 lime, juiced 1 pinch salt 1 ripe, Fresh California Avocado, seeded, peeled and cubed 1 shallot, peeled and sliced thinly Oil for frying Avocado Mint Sauce: 2 ripe, Fresh, California Avocados, seeded, peeled and quartered 2 sprigs mint, stems removed, or more to taste 1/2 cup full-fat Greek yogurt Salt, to taste 2 limes, juiced 1 clove garlic, peeled Water, as needed
  1. Preheat the oven to 350°F. Prep a 12 cup muffin tin by lightly greasing with oil or cooking spray. Add wonton wrapper and push down in a muffin cup until wonton wrapper is tucked in and secure. Repeat with all 12 wrappers. Bake in the oven for 8-10 mins until crispy and golden brown. Set aside.
  2. While wonton cups are baking, add minced tuna, sriracha, soy sauce, sesame oil, lime juice, and salt to a large bowl then mix to combine well. Set aside.
  3. In a small pot, add enough oil to fill about 2 inches from the bottom of the pot. Add thinly sliced shallots and fry for about 4-5 mins until golden brown and crispy. Remove shallots from oil and drain on a paper towel lined plate.
  4. To make the avocado mint sauce, add avocados, mint, yogurt, salt, lime juice, and garlic to a blender and blend until smooth. Add 1 Tbsp. water at a time as needed to loosen and achieve desired consistency (should be slightly runny, but still thick and saucy).
  5. To assemble, remove wonton wrapper from muffin tin then create a layer of 1 tsp. tuna, 1 tsp. cubed avocado, and a drizzle of avocado mint sauce. Then add another layer of 1 tsp. tuna, 1 tsp. cubed avocado and top with a pinch of fried shallot. Repeat for remaining wonton cups.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
