Cheese Grits with California Avocado

Ingredients2 cups water 1/2 tsp. salt 1/2 cup stone-ground grits 2 Tbsp. butter 1/2 cup shredded Cheddar cheese 1 ripe, Fresh California Avocado peeled, seeded and cut into ½” cubes
- In a saucepan, combine water and salt; bring to a boil over medium-high heat.
- Add grits, stirring to combine. Reduce heat to low. Cook, stirring frequently, for 25 to 30 minutes, or until grits are thickened and creamy.
- Remove grits from heat and let stand for 5 minutes.
- Add butter and cheese
- Top with avocado cubes
Serving Suggestion: Top with sautéed or BBQ shrimp or mixed veggies for a dinner entrée.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
