Ingredients

Serves: 12
12  slices  artisan whole wheat bread, (½” thick slices)
  ripe, Fresh California Avocado, seeded, peeled and sliced
24    figs, halved
oz.  feta cheese, crumbled (3/4 cup)
cups  arugula, (3 oz.)
1/2  cup  olive oil

As with all fruits and vegetables, wash avocados before cutting. Check out our tips for how to choose and use California Avocados

Instructions

  1. Preheat a grill or grill pan to medium-high heat. Lightly oil the bread slices and grill until golden brown on both sides.
  2. Lightly oil the figs. Grill figs, cut side down, until lightly caramelized. Turn over and cook for another 30 seconds to 1 minute. Remove from heat.
  3. Top each grilled bread slice with ¼ cup of arugula, ½ of an avocado, 4 fig halves, and 1 Tbsp. of crumbled feta cheese. Drizzle with 1 tsp. of olive oil. Serve.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
