The Go FIGure California Avocado Toast
|12||slices||artisan whole wheat bread, (½” thick slices)|
|6||ripe, Fresh California Avocado, seeded, peeled and sliced|
|6||oz.||feta cheese, crumbled (3/4 cup)|
|3||cups||arugula, (3 oz.)|
As with all fruits and vegetables, wash avocados before cutting. Check out our tips for how to choose and use California Avocados
- Preheat a grill or grill pan to medium-high heat. Lightly oil the bread slices and grill until golden brown on both sides.
- Lightly oil the figs. Grill figs, cut side down, until lightly caramelized. Turn over and cook for another 30 seconds to 1 minute. Remove from heat.
- Top each grilled bread slice with ¼ cup of arugula, ½ of an avocado, 4 fig halves, and 1 Tbsp. of crumbled feta cheese. Drizzle with 1 tsp. of olive oil. Serve.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
