Ingredients
2 large or 4 small tomatoes, sliced 1/2 small red onion, thinly sliced 2 ripe, Fresh California Avocados, seeded, peeled and sliced 1/2 cup red wine vinaigrette or Mojo Dressing (see make-ahead recipe below) Mojo Dressing 1/3 cup bitter orange juice (if not available use regular orange juice plus 1 Tbsp. lime juice) 1/4 cup extra virgin olive oil 2 cloves garlic, minced 1/4 tsp. sea salt 1/2 tsp. black pepper 1/2 tsp. crushed oreganoInstructions
- Arrange sliced tomatoes, onions and avocados in rows on a salad plate.
- Drizzle with dressing or serve dressing on the side.
Mojo Dressing Instructions
- Blend all ingredients together in a blender or shake together in a jar with a lid. Refrigerate until ready to use.
Serving Suggestion: Serve a salad course before your favorite Cuban entrée or arrange as a fresh side dish next to a grilled or chilled protein.
Beverage Pairing: Acidic white wine or rosé.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
