I have a confession to make. I have a son who doesn’t like avocado.

I know. I KNOW! It’s sad. California grown avocados have become one of my favorite foods and nutritionally it’s such a powerhouse.

I’ve tried to serve it to him plain, on tacos, as a dip, on top of pizza, even thinly sliced on his favorite thing in the whole world, a burger.

Nothing worked.

Then it hit me. Kids don’t get as excited as adults do about the savory side of California Avocado. Kids like sweet. They like fun. They like chocolate and ice pops!

Well, little do kids know, California Avocado makes the best, creamiest pudding ever. Its texture blends perfectly with chocolate. Add a little sweetener and those kids who normally turn their nose up avocado are singing a different tune.

How do I know?

Well, my son, the avocado hater, declared his love for my homemade pudding pops today.

The star ingredient?

That’s right. I found a way to get awesome California Avocado in my child and it couldn’t be easier to make. All it takes are four simple ingredients and a few hours in the freezer.

Four Ingredient California Avocado Pudding Pops Recipe

Serves: 4

Prep time:  5 minutes
Cook time: 3 hours (or overnight)
Total time: 3 hours and 5 minutes

Ingredients
1 ripe, Fresh California Avocado, seeded and peeled
1/3 cup maple syrup
1 cup milk
1 tablespoon unsweetened cocoa powder
1 ice pop/popsicle mold

Directions

  1. Blend all ingredients until smooth.
  2. Pour into ice pop mold.
  3. Freeze for 3 hours or overnight.
  4. Remove pops from mold and your kids can enjoy some California Avocado pudding pop awesomeness.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
