Ingredients1 ripe, Fresh California Avocado, seeded, peeled and cubed 3 Tbsp. honey 2 tsp. orange zest 1/2 tsp. vanilla extract 1/4 tsp. salt 8 oz. mascarpone cheese
- In a large mixing bowl, add avocado, honey, orange zest, vanilla and salt and blend together as smoothly as possible with whisk or fork, take care to not overmix.
- Fold in mascarpone (can be left on counter for up to one hour ahead to soften) with rubber spatula and gently mix until fully incorporated.
Serving Suggestion: Pair this with a dessert board with fresh apple slices and other fruit. Beverage Pairing: Enjoy with a glass of Riesling.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
