Roasted Unagi with California Avocado Sushi

As needed | California Avocado Sushi Rice (recipe follows) | |
4 | oz. | unagi |
1 | Tbsp. | prepared teriyaki sauce |
1 | tsp. | toasted sesame seeds |
1 | tsp. | chives, chopped |
1/3 | cup | shaved bonito flakes |
California Avocado Sushi Rice (Yield: 3/4 cup) | ||
1/2 | cup | prepared sushi rice |
1/4 | Fresh California Avocado*, coarsely chopped | |
1 1/2 | Tbsp. | mayonnaise |
As needed | Prepared wasabi paste, to taste |

Instructions
California Avocado Sushi Rice:
- Combine sushi rice, avocado, and mayonnaise in a bowl. Add wasabi paste to taste.
To Assemble:
- Form the California Avocado Sushi Rice into a rectangular shape on a plate, roughly the size of the unagi.
- Heat a grill to medium high heat. Grill unagi for 1 minute on each side. Remove from heat.
- Glaze unagi with teriyaki sauce, then garnish with sesame seeds and chives. Lay unagi over the rice. Garnish with shaved bonito. Serve.
*A large Fresh California Avocado weighs about 8 oz.
