Roasted Unagi with California Avocado Sushi

Serves: 1
  As needed  California Avocado Sushi Rice (recipe follows)
oz.  unagi
Tbsp.  prepared teriyaki sauce
tsp.  toasted sesame seeds
tsp.  chives, chopped
1/3  cup  shaved bonito flakes
    California Avocado Sushi Rice (Yield: 3/4 cup)
1/2  cup  prepared sushi rice
1/4    Fresh California Avocado*, coarsely chopped
1 1/2  Tbsp.  mayonnaise
  As needed  Prepared wasabi paste, to taste

As with all fruits and vegetables, wash avocados before cutting. Check out our tips for how to choose and use California Avocados


California Avocado Sushi Rice:

  1. Combine sushi rice, avocado, and mayonnaise in a bowl. Add wasabi paste to taste.

To Assemble:

  1. Form the California Avocado Sushi Rice into a rectangular shape on a plate, roughly the size of the unagi.
  2. Heat a grill to medium high heat. Grill unagi for 1 minute on each side. Remove from heat.
  3. Glaze unagi with teriyaki sauce, then garnish with sesame seeds and chives. Lay unagi over the rice. Garnish with shaved bonito. Serve.

*A large Fresh California Avocado weighs about 8 oz.
