This dinner toast is unbeatable with three standalone star components that when combined, create a hearty affair. From the homemade avocado pistachio pesto, to mashed avocados and smoked salmon, this dinner toast is incredibly satisfying and decadent. Fresh California avocados make their way into the homemade pistachio pesto creating a pesto that uses less oil and has even more flavor with a luscious texture.

Homemade California Avocado Pistachio Pesto 4 cups fresh basil leaves 1/4 cup olive oil 3/4 ripe, Fresh California Avocado, seeded, peeled and mashed 1/3 cup pistachios 2 garlic cloves 3/4 cup parmesan cheese 1 tsp. salt Smoked Salmon with Homemade California Avocado Pistachio Pesto California Avocado Pistachio Pesto (see make ahead recipe above) 1 slice of sourdough bread, toasted 1/4 ripe, Fresh California Avocado, seeded, peeled and mashed 1/2 cup smoked salmon, or lox

California Avocado Pistachio Pesto

  1. Add all the ingredients into the food processor and blend until creamy.
  2. Pour into a small bowl and set aside until ready to use.

Smoked Salmon with Homemade Pistachio Pesto and California Avocado

  1. Add a generous scoop of California Avocado Pistachio Pesto on the bread.
  2. Add a thick layer of the mashed avocado.
  3. Top with the smoked salmon.

Variations: For meat lovers, add thick cut maple bacon. Or, for a vegan treat, swap out a portobello mushroom in place of the smoked salmon.

Serving Suggestion: This dinner toast pairs beautifully with a crunchy side salad.
