California Avocado Pistachio Pesto
- Add all the ingredients into the food processor and blend until creamy.
- Pour into a small bowl and set aside until ready to use.
Smoked Salmon with Homemade Pistachio Pesto and California Avocado
- Add a generous scoop of California Avocado Pistachio Pesto on the bread.
- Add a thick layer of the mashed avocado.
- Top with the smoked salmon.
Variations: For meat lovers, add thick cut maple bacon. Or, for a vegan treat, swap out a portobello mushroom in place of the smoked salmon.
