The Hungry, Hungry Hippie Sandwich

|48||slices||tomato, ¼” thick|
|48||slices||cucumber, 1/8” thick|
|24||slices||red bell pepper, ¼ inch wide|
|4||ripe, Fresh California Avocados, peeled, cut into thirds, seeded|
As with all fruits and vegetables, wash avocados before cutting. Check out our tips for how to choose and use California Avocados
- Spread ¼ cup of hummus on 12 of the bread slices. Top each with ¼ cup of arugula, then 4 slices of tomato, 4 slices of cucumber, 2 strips of red bell pepper, 1 Tbsp. of tahini dressing, 1/3 of an avocado, sliced, and the remaining bread slices. Serve.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
