The Hungry, Hungry Hippie Sandwich
Ingredients24 slices multigrain or gluten-free bread 3 cups hummus 48 slices tomato, ¼” thick 48 slices cucumber, 1/8” thick 24 slices red bell pepper, ¼ inch wide 3/4 cup tahini dressing 4 ripe, Fresh California Avocados, peeled, cut into thirds, seeded
- Spread ¼ cup of hummus on 12 of the bread slices. Top each with ¼ cup of arugula, then 4 slices of tomato, 4 slices of cucumber, 2 strips of red bell pepper, 1 Tbsp. of tahini dressing, 1/3 of an avocado, sliced, and the remaining bread slices. Serve.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
