24  slices  multigrain or gluten-free bread
cups  hummus
48  slices  tomato, ¼” thick
48  slices  cucumber, 1/8” thick
24  slices  red bell pepper, ¼ inch wide
3/4  cup  tahini dressing
  ripe, Fresh California Avocados, peeled, cut into thirds, seeded

As with all fruits and vegetables, wash avocados before cutting. Check out our tips for how to choose and use California Avocados



  1. Spread ¼ cup of hummus on 12 of the bread slices. Top each with ¼ cup of arugula, then 4 slices of tomato, 4 slices of cucumber, 2 strips of red bell pepper, 1 Tbsp. of tahini dressing, 1/3 of an avocado, sliced, and the remaining bread slices. Serve.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
