It’s a taste of the tropics with this California Avocado shrimp salad. Simply marinate cooked shrimp with your choice of tropical fruit juice and lime, along with cucumber and diced avocado. Then add tomatoes, red onions, more cucumber and more California Avocado! Plantain chips are a nice accompaniment.

1 cucumber, divided 1 lb. frozen, cooked rock shrimp, tails removed and deveined, thawed 2 ripe, Fresh California Avocados, seeded, peeled and 1/4 inch diced 1/2 cup mango, papaya or pineapple juice 1/2 cup fresh lime juice 1 vine-ripened tomato, 1/4 inch diced 1/2 medium red onion, peeled and 1/4 inch diced
  1. Cut 1 cucumber in half width-wise. Cut one half into ¼ inch dice and make thin-sliced cucumber ribbons with the other half. Set aside.
  2. In a large mixing bowl, place the shrimp, diced cucumber, half the diced avocado and both juices in the bowl. Gently mix and let marinate for 20 minutes.
  3. With a slotted spoon, place the shrimp mixture in a serving dish, adding the liquid to fill just half way up the dish.
  4. Garnish the serving dish with the cucumber ribbons, tomato, and onions. Top the entire dish with the remaining diced avocados and serve immediately.

 

Variations: Add additional vegetables, hot sauce, or minced chiles. Or spoon the avocado and shrimp salad over arugula or baby lettuces.

 

Serving Suggestion: Serve with a side of plantain chips or tortilla chips.

 

Beverage Pairing: White wine,or a light cocktail such as a gin and tonic or martini.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
