Ingredients
2 | tsp. | coconut oil |
2 | cloves garlic, minced | |
1 | sweet potato, medium, peeled and spiralized or thinly sliced | |
1 | zucchini, sliced thin or spiralized | |
2 | eggs | |
1 | ripe, Fresh California Avocado, seeded, peeled and diced | |
1/8 | tsp. | salt, or to taste |
1/8 | tsp. | pepper, or to taste |
1/2 | tsp. | hot sauce, or to taste |

Instructions
- Preheat 1 tsp of coconut oil in a large skillet over medium heat
- Add garlic, sweet potato and zucchini
- Stir and cook for 5-7 minutes or until vegetables are tender
- Push vegetables over to the side of the skillet, add the additional teaspoon of coconut oil
- Once the oil is heated, add 2 eggs and scramble
- When the eggs are scrambled, stir together with the cooked vegetables
- Top with diced California Avocados, salt, pepper and hot sauce
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
