California Avocado and Hatch Chile Bagel and Toast Topper

This seasonal variation of a popular California Avocado spread for toast and bagels features roasted Hatch chile – it’s perfect for late summer breakfasts.

1 ripe, Fresh California Avocados, seeded and peeled 1 Hatch chile, roasted, seeded, peeled and diced 1 Tbsp. fresh lime juice 1 Tbsp. minced cilantro (optional) 1 oz. queso fresco, (optional) As needed Salt to taste
  1. Mash avocado, Hatch chile and lime juice together in a medium bowl.
  2. Fold in cilantro and queso fresco, if using.
  3. Salt to taste.

Serving Suggestions: Spread on toast, toasted bagels and more.

Beverage Pairing: Fresh-squeezed grapefruit juice.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
