This versatile warm salad recipe featuring grilled sirlon beef, vegetables and California Avocados can easily be made into a sandwich. The creamy California Avocado sauce perfectly complements the sirloin beef which is a lean protein. A tasty salad with a good source (10% DV) or more of 11 of the 13 essential nutrients: vitamins A (15% DV), C (30% DV), E (20% DV), K (90% DV), B1 (15% DV), B2 (45% DV), B3 (130% DV), B6 (90% DV), B12 (210%) and folate (45% DV). For the marinade 1/2 cup lime juice 1/4 cup chopped cilantro 1 tsp. sea salt 1 Tbsp. extra virgin olive oil 1 1/2 lb. beef sirloin, 1.5 inch thick For the sauce 1 ripe, Fresh California Avocado, peeled, seeded and diced 1 oz. parmesan cheese, shredded 1 Tbsp. lime juice For the salad 1 Tbsp. olive oil 1 medium yellow bell pepper, sliced 1 small red onion, sliced 1 tsp. sea salt 1/2 tsp. black pepper 1 bag arugula or spring mix, (10-oz.)
  1. Whisk together lime juice, chopped cilantro, sea salt, black pepper and extra virgin olive oil in a medium size bowl.
  2. Add beef and marinate for at least 1 hour at room temperature, or overnight in the refrigerator.
  3. Pre-heat grill to 400 degrees F. Discard marinade.
  4. Grill beef for 7 minutes on each side for medium done steak.
  5. Let it cool for about 5 minutes, then thinly slice beef.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.

Did You Know?
