Agua Fresca is a drink popular in Mexico and Central America that directly translates to “cool” or “fresh” water. This California Avocado Agua Fresca recipe is a refreshing drink that’s perfect for the summer – and it’s 100% vegan and dairy-free, made with ripe, Fresh California Avocados which add a bit of creaminess. Blend together with zesty lime juice, juicy honeydew melon, fresh mint and just a touch of matcha powder, and you’ll be making this drink on repeat.

1 ripe, Fresh California Avocado, seeded and peeled 3 cups diced fresh honeydew melon, or more to taste 1/3 cup fresh lime juice 1/2 tsp. ceremonial grade matcha powder (optional, for color) 1 Tbsp. sweetner, or to taste 3 cups chilled, sparkling mineral water ice, to serve 1 lime thinly sliced, for garnish Fresh mint leaves, for garnish
  1. Add avocado, honeydew melon, lime juice and matcha powder (if using) to a high-speed blender and blend until smooth.
  2. If desired, add additional honeydew melon or sweetener to adjust to taste.
  3. Strain mixture to ensure there are no chunks remaining, then combine with sparkling water to serve.
  4. Serve over ice with slices of lime and fresh mint to garnish.
  5. Enjoy immediately.

Serving Suggestion: Reserve some thin slices of California Avocado for additional garnish. Because these beverages contain a good amount of lime juice, you don’t have to worry too much about the avocado oxidizing. This drink contains avocado and sparkling mineral water, so it’s best enjoyed immediately!

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.

Editor's Note

If you’d like to prepare some of the components in advance, you can chop the honeydew melon and juice the limes. If you like mint, you can choose to blend some mint leaves in at this step as well. You’ll want to avoid the ice melting and diluting your drink.
