Blended burgers are a great way to add vegetables and legumes to a meal. This blended avocado burger combines ground beef, mushrooms, lentils, roasted red peppers and Fresh California Avocado into the burger patties, making them extra tasty and juicy. They are topped with tropical California Avocado Pineapple Relish and served in lettuce wraps.

1 Tbsp. butter 1 cup sliced mushrooms 2 tsp. Worcestershire sauce, divided 1/3 ripe, Fresh California Avocado, seeded, peeled and mashed 3/4 lb. 80% lean ground beef 1/2 cup cooked lentils 2 Tbsp. minced roasted red peppers 1/2 tsp. sea salt 4 large butter or green lettuce leaves 4 oz. slices pepper jack cheese, optional California Avocado Pineapple Relish (make-ahead recipe below) California Avocado Pineapple Relish 1/3 cup diced pineapple, fresh or canned 3 Tbsp. finely chopped onion 1 Tbsp. lemon juice 2 tsp. chopped fresh mint 1/8 tsp. salt 1/8 tsp. crushed red pepper flakes 2/3 ripe, Fresh California Avocado, diced
  1. Melt butter in a medium skillet over medium heat. Sauté mushrooms in the melted butter until they are soft and starting to brown, about 4 minutes. Stir in half the Worcestershire sauce and cook for one more minute. Remove from heat and keep warm.
  2. Stir together the mashed avocado and remaining Worcestershire sauce, then combine with the beef, lentils, roasted red peppers, salt. Form into patties and cook in a skillet over medium-high heat until they reach 145 degrees F, about 5 minutes per side, adding the cheese slices (if using) during the last couple of minutes of cooking.
  3. Place lettuce leaves on serving plates. Top with cooked burgers, then spoon on the mushrooms and California Avocado-Pineapple Relish. Serve immediately.

Relish

  1. Combine pineapple with the next 5 ingredients
  2. Gently fold in avocado
  3. Let chill 1 hour to marry flavors
  4. Best served the day it’s made.

Serving Suggestion: Serve with grilled meat, poultry or fish or layer it on a turkey, ham or cheese sandwich.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
