One sip of this quick and easy California Avocado Frozen Daiquiri will transport you straight to the California coastline. Just blend and enjoy!

1/2 ripe, Fresh California Avocado, peeled and seeded 4 cucumbers, cut into 1/4-inch cubes 1/3 cup coconut milk 6 fresh mint leaves 1 1/2 cups fresh mango, diced 2 Tbsp. honey 1 Tbsp. lime juice 3/4 cup pineapple juice 4 oz. rum 1 cup ice
  1. Add all ingredients to a blender and blend until completely smooth.
  2. Taste for flavor and, as needed, add more pineapple juice or honey to taste.
  3. Pour contents in two glasses to serve.

Serving Suggestion: Make ahead a big pitcher of these California Avocado Frozen Daiquiris for a large party.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
