This luxurious and unique appetizer combines Fresh California Avocado with soft, tangy California goat cheese for the ultimate mouthwatering appetizer or snack. Or serve as a side dish! The truffles are made by combining a round piece of avocado with goat cheese, rolling it into a ball and covering it in crushed / chopped nuts and seeds, which include pistachios, pumpkin seeds and pecans. You also can use all seeds for a nut-free treat. Truffles may be served as a “pop” with a “stick.”

2 ripe, Fresh California Avocados, seeded, peeled and halved 1 cup crumbled California goat cheese 1/4 cup chopped or crumbled roasted and salted pistachios 1/4 cup chopped or crumbled roasted and salted pumpkin seeds 1/4 cup chopped or crumbled raw pecans Toothpicks or pop sticks
  1. Using a small round (#60) scoop, melon baller or teaspoon, scoop out 8 ‘balls’ from each avocado half and set aside.
  2. Using a tablespoon, scoop out goat cheese portions and immediately combine the goat cheese and avocado, gently rolling it into a ball using your hands.
  3. Roll each avocado and goat cheese ball in the crumbled nuts, alternating nuts and seeds until you have an even number of each.
  4. Set balls onto a plate or serving board and insert toothpick or pop stick into the center of each one just before serving.

Variations: Use any combination of nuts and seeds you would like. Sunflower and pumpkin seeds would be perfect to make this nut allergy friendly.

Serving Suggestion: These pops can be made a couple of hours ahead and stored in the fridge prior to serving. Serve pops on a tray, plate or decorative cutting board.

Beverage Pairing: This would pair perfectly with chilled white wine or rose. Alternatively, this would be delicious with iced or hot tea, or sparkling water with lemon or lime.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
