 California Avocado Hash Browns

Hash browns done California style with delicious, nutritious California Avocados and topped with sour cream, salsa and cilantro make this dish for vegetarian and gluten-free diets. In addition to great taste, the addition of the avocados adds to the healthfulness of this breakfast dish providing an excellent source (20% DV) of potassium, vitamin E and B5, along with a good source of dietary fiber (14% DV), protein (12% DV), 15% DV of folate and vitamin B 3 along with 10% DV of iron, vitamins K and B6. If you choose to pass on the sour cream, it great for a vegan diet. Enjoy!

Ingredients

Serves: 4
1/2  Tbsp.  lemon juice
  ripe, Fresh California Avocado, peeled, seeded and diced
1 1/2  lb.  frozen shredded hash browns with onion*
1/4  cup  vegetable oil
1/8  tsp.  sea salt, or to taste
1/8  tsp.  ground black pepper, or to taste
1/3  cup  sour cream
1/4  cup  prepared tomato salsa
Tbsp.  chopped cilantro, optional

Instructions

  1. Gently mix lemon juice with avocado; reserve.
  2. In a large frying pan, heat oil. Add potatoes and cook, turning frequently, until tender and lightly browned, about 5 minutes.
  3. Gently fold avocado into hash browns and continue cooking until well browned, about 3 minutes. Add sea salt and pepper to taste.
  4. Top each serving with sour cream, salsa and cilantro, if using.

Serving Suggestion: Serve alongside your favorite cooked eggs for breakfast or with ham or grilled veggies for dinner.

Beverage Pairing: Cup of coffee, orange juice or water with a slice of lemon.

*If you cannot find frozen hash browns with onions, add ¼ cup chopped onions, sautéed.

**Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
