Ingredients
2 ripe, Fresh California Avocados, seeded and peeled 1 Tbsp. rice wine vinegar 1/2 tsp. sea salt 1/2 tsp. soy sauce 1/2 cup kimchi 2 large California local eggs, cooked over easy 2 Tbsp. thinly sliced scallions 1 tsp. sesame seeds Large flake salt, for finishingInstructions
- In the bowl of a food processor, puree avocados until smooth. Add rice vinegar, salt and soy sauce and pulse to combine. Remove from bowl and top toasted sourdough with approximately 1/2 cup avocado puree per slice. Top with kimchi and an over easy egg. Finish with salt, sesame seeds and scallions.
- Store any remaining mousse in a reusable container with all air bubbles removed, and top with a paper towel soaked in lemon juice. Mousse will keep up to two days.
Beverage Pairing: Coffee or tea.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
