California Avocado Pesto

Chef Diaz developed this California Avocado pesto as a great way to add creamy richness to a regular pesto. This is a perfect use for avocados that are just a bit overripe.

Avocado Pesto (Yield: 3 cups) 1 1/2 cups (12 oz.) pre-made pesto 1 1/2 Tbsp. crème fraiche 1 1/2 Fresh California Avocados, peeled, seeded
  1. Combine all ingredients in a blender and puree until smooth.
  2. Cover and refrigerate until service.

Serving Suggestions:

  1. Add a dollop atop proteins and sides such as salmon, steak, baked potatoes, pasta.
  2. Use as a sandwich spread.
  3. Serve as a dip.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
