Ingredients
1/2 cup seeded and diced tomatoes 2 Tbsp. minced white onion 1/2 serrano pepper, stemmed, seeded and minced, or more to taste 1 ripe, Fresh California Avocado, peeled, seeded and diced 1 1/2 Tbsp. minced cilantro, optional 1/2 tsp. sea salt, divided 1 lb. lean ground turkey or chicken 4 Kaiser rolls, split (or your favorite buns/bread) 1 cup spring mix baby lettuces and greens 1/4 cup mayonnaise, optionalInstructions
- Gently combine tomatoes, onion, serrano, avocado, cilantro (if using) and half the salt. Set aside.
- Stir remaining salt into the ground turkey or chicken. Form into patties and cook over medium heat until they reach 165 degrees F, about 3 minutes per side.
- Warm the rolls if desired.
- Spread the bottom half of the rolls with mayonnaise if using, then add the cooked burgers. Top with spring mix, avocado salsa and the tops of the rolls. Serve immediately. Note, some of the salsa and spring mix may spill out onto the plates. That’s ok, just grab a fork and enjoy!
Variation (shown in picture)
Top each burger with 1 Tbsp. blue cheese crumbles before adding the spring mix and California Avocado salsa.
Serving Suggestion: Serve with tortilla chips.
Beverage Pairing: A frosty margarita.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
