California Avocado Salsa Verde

Ingredients8 tomatillos, quartered 1 ripe, Fresh California Avocados, seeded and peeled 1/4 cup fresh lemon juice 2/3 cup cilantro 2 shallots 2 Tbsp. water 1/4 tsp. sea salt, or to taste
- Add all ingredients into a blender and blend until creamy. Pour into a bowl and set aside until ready to serve.
Variations: For heat seekers, add 2 jalapeños with seeds removed (with seeds for a real kick) to the blender with the California Avocado Salsa Verde ingredients.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
