California Chicken Avocado Citrus Salad Wrap

Pick up a rotisserie chicken and this chicken salad inspired wrap is a snap to make. All the elements of a fresh, crisp salad rolled up into a wrap…no fork required.

Dressing (Yield 2/3 cup – approx.) 1/4 cup lime juice 1/4 cup Extra virgin olive oil 2 Tbsp. red onion, minced 1 tsp. Dijon mustard 1 Tbsp. honey 1 tsp. cumin As needed Salt to taste Wrap 2 cups rotisserie chicken, meat removed from the bone and sliced (using primarily the breast meat) 1 large orange, peeled and cut into bite-sized pieces 1 cup cherry tomatoes, halved 1/4 cup chopped, fresh cilantro 4 cups thickly chopped romaine lettuce 1 ripe, Fresh California Avocado, seeded, peeled and sliced 4 burrito-sized whole wheat low-sodium tortillas
  1. In a small bowl, whisk together all of the dressing ingredients and set aside.
  2. In a large bowl, combine the chicken, orange, tomatoes, cilantro and lettuce. Toss with the dressing.
  3. To assemble the wrap, first place several avocado slices on the middle of the tortilla. Then top with approximately 1 ½ cups of the salad mixture. To roll, tuck in the sides of the tortilla first and roll up from the bottom keeping the sides tucked in place. Repeat for remaining wraps. Cut wraps in half and serve.

Serving Suggestion: Pair with fresh fruit and sliced vegetables.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
