These muffins are beyond fudgy, delicious gluten-free and non-dairy. Thanks to creamy California Avocados, they are rich and moist. The chocolate muffin batter mixes together easily in a blender or food processor for minimal clean up and come together in just about 30 minutes.

1 1/2 ripe, Fresh California Avocados, seeded and peeled 1/4 cup sugar 1 tsp. vanilla extract 1/2 cup cacao powder 1/2 cup almond flour 1 egg 1 tsp. baking powder 1/2 cup milk chocolate chips, divided All-purpose baking spray
  1. Preheat the oven to 350 F.
  2. Add avocado, sugar, vanilla, cacao powder, flour, egg and baking power to a blender and blend until smooth and creamy.
  3. Gently fold in chocolate chips, (reserving some chips to top the muffins) careful not to overmix.
  4. Lightly coat the muffin tin with non-stick spray to avoid any stubborn sticking.
  5. Spoon the muffin mixture into the lined and oiled muffin tins, filling them about three-fourths full.
  6. Bake for 25 minutes or until tops are firm to the touch and a toothpick inserted in the center comes out clean.
  7. Top warmed cupcakes with remaining chips.

Variations: Feel free to swap out (or add) dark, semi-sweet, or even white chocolate chips to the batter to customize chocolate to your taste.

Serving Suggestion: The batter can be prepared ahead of time and set in the refrigerator covered until ready to bake.

Beverage Pairing: Enjoy with a chilled glass of milk, or hot cup of coffee or tea.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
