Ingredients
1 1/2 ripe, Fresh California Avocados, seeded and peeled 1/4 cup sugar 1 tsp. vanilla extract 1/2 cup cacao powder 1/2 cup almond flour 1 egg 1 tsp. baking powder 1/2 cup milk chocolate chips, divided All-purpose baking sprayInstructions
- Preheat the oven to 350 F.
- Add avocado, sugar, vanilla, cacao powder, flour, egg and baking power to a blender and blend until smooth and creamy.
- Gently fold in chocolate chips, (reserving some chips to top the muffins) careful not to overmix.
- Lightly coat the muffin tin with non-stick spray to avoid any stubborn sticking.
- Spoon the muffin mixture into the lined and oiled muffin tins, filling them about three-fourths full.
- Bake for 25 minutes or until tops are firm to the touch and a toothpick inserted in the center comes out clean.
- Top warmed cupcakes with remaining chips.
Variations: Feel free to swap out (or add) dark, semi-sweet, or even white chocolate chips to the batter to customize chocolate to your taste.
Serving Suggestion: The batter can be prepared ahead of time and set in the refrigerator covered until ready to bake.
Beverage Pairing: Enjoy with a chilled glass of milk, or hot cup of coffee or tea.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
