California Avocado Mousse Filling 10 oz. dark chocolate bar, melted 1 ripe, Fresh California Avocado, seeded and peeled 2 Tbsp. cocoa powder 1/8 tsp. kosher salt 3 Tbsp. honey California Avocado Whipped Topping 1/2 ripe, Fresh California Avocado, seeded and peeled 3 Tbsp. honey 3 Tbsp. powdered sugar 1/8 tsp. kosher salt dark chocolate bar, optional raspberries, optional Chocolate California Avocado Tart 20 chocolate wafer sandwich cookies 3 Tbsp. unsalted butter, melted 2 Tbsp. sugar 1/8 tsp. kosher salt California Avocado Mousse Filling (see make-ahead recipe above) California Avocado Whipped Topping (see make-ahead recipe above)Instructions
California Avocado Mousse Filling
- Chop the chocolate bar into pieces and add to a microwave safe bowl.
- Microwave chocolate in 30 second intervals, mixing after each interval.
- In a food processor or blender, add avocado, cocoa powder, salt and honey. Blend together until the mixture is smooth.
- In the food processor or blender, stream in the melted chocolate until combined.
California Avocado Whipped Topping
- In a food processor, blend the avocado until smooth.
- Add in honey, powdered sugar and kosher salt and blend until smooth.
Chocolate California Avocado Tart
- Preheat the oven to 350 F.
- Halve and scrape out the cream filling of the sandwich cookies.
- Add cookies to a blender or food processor and blend together until crumbs have formed.
- In a medium bowl mix together cookie crumbs, melted butter, sugar and kosher salt.
- In a tart or pie pan add crumb mixture and press into the pan evenly on the bottom and sides.
- Bake the crust for 10 minutes.
- Once cooled, add the California Avocado Mousse Filling and refrigerate until firm, about 3-4 hours.
- When ready to serve, swirl California Avocado Whipped Topping on top of tart. Garnish with shaved chocolate and raspberries, if using.
Serving Suggestion: Prepare as a pie or individual tarts using a tart pan.
Beverage Pairing: Pair with a cup of coffee or latte.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
