California Avocado Grapefruit Salsa 1 lime, zest grated, and juice reserved 1 1/2 Tbsp. honey 2 medium red grapefruit, peeled and segmented, juice reserved 1 1/2 tsp. chipotle peppers in adobo sauce, seeds and membranes removed, diced 2 Tbsp. finely diced red onion 1/2 tsp. ground cumin 1/2 tsp. sea salt 1/2 cup cilantro, chopped 2 ripe, Fresh California Avocados, peeled, seeded and diced Grilled Swordfish 1/4 cup vegetable oil 3 cloves garlic, finely chopped 1 Tbsp. ground cumin 1 1/2 tsp. sea salt 6 (6-oz.) swordfish steaks California Avocado Grapefruit salsa (see recipe below) Cilantro sprigs, as needed for garnishInstructions
California Avocado Grapefruit Salsa
- In a medium bowl, Mix lime zest and juice with the honey.
- Gently stir in grapefruit and reserved juice, peppers, onions, cumin, salt and cilantro.
- Fold in the avocados and use immediately.
Grilled Swordfish
- Mix oil, cumin and salt.
- Rub mixture on swordfish steaks. Grill swordfish until just firm to the touch, about 3 minutes per side.
- Top grilled fish with California Avocado Grapefruit Salsa.
Serving Suggestion: Serve with grilled veggie kebabs and a wild rice blend.
Beverage Pairing: Sauvignon Blanc.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
