Ingredients1 ripe, Fresh California Avocado, seeded, peeled and chopped 1 Hatch chile, roasted, seeded and chopped 1/3 cup extra virgin olive oil 3 Tbsp. fresh lemon juice 1 clove garlic, minced or crushed 1 Tbsp. minced cilantro (or to taste) 1/8 tsp. sea salt, or to taste
- Combine all ingredients in a blender or processor and blend until smooth.
Serving Suggestions: Serve as a salad dressing as shown or as a dip for crisp veggies.
Beverage Pairing: Pair with a light, sweet wine like Moscato.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
