Roasted Hatch Chile Avocado Dressing and Dip
|1||ripe, Fresh California Avocado, seeded, peeled and chopped|
|1||Hatch chile, roasted, seeded, peeled and chopped|
|1/3||cup||Extra virgin olive oil|
|3||Tbsp.||fresh lemon juice|
|1||Tbsp.||minced cilantro (or to taste)|
|As needed||Salt to taste|

- Combine all ingredients in a blender or processor and blend until smooth.
