Tangy Mediterranean Guacamole

A tangy, Mediterranean twist on classic guacamole.

Serves: 6

4 large or 6 small California avocados 2 T plain yogurt 3 T sliced pepperoncini peppers + 1/4 c brine from the jar 1/8 tsp. garlic powder 1/8 tsp. coarsely ground black pepper 1/4 tsp. sea salt 1/3 cup sliced oil-pack sun-dried tomatoes 1/2 cup goat cheese crumbles

Remove peels and pits from avocados and put all the flesh in a medium-sized bowl. Add yogurt and pepperoncini brine, garlic powder, black pepper, and sea salt. Mash everything together with a fork until you reach desired consistency and everything is thoroughly combined. Stir in sliced peppers, tomatoes, and goat cheese crumbles, reserving some of each for garnish, if desired. Adjust the salt and pepper to taste. Serves 6.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
