A tangy, Mediterranean twist on classic guacamole.
Tangy Mediterranean Guacamole
|4 large or 6 small California avocados|
|2||T plain yogurt|
|3||T sliced pepperoncini peppers + 1/4 c brine from the jar|
|1/8||tsp.||coarsely ground black pepper|
|1/3||cup||sliced oil-pack sun-dried tomatoes|
|1/2||cup||goat cheese crumbles|

Remove peels and pits from avocados and put all the flesh in a medium-sized bowl. Add yogurt and pepperoncini brine, garlic powder, black pepper, and sea salt. Mash everything together with a fork until you reach desired consistency and everything is thoroughly combined. Stir in sliced peppers, tomatoes, and goat cheese crumbles, reserving some of each for garnish, if desired. Adjust the salt and pepper to taste. Serves 6.
