If there’s one thing we know in life, it’s how much we love guacamole. It’s undeniable, no matter how you scoop it: with tortilla chips, on top of tacos, as a burger fixing or straight out of the molcajete. But finding that perfect guacamole recipe should basically be a professional sport. (How much lime is really enough lime? And are you supposed to sprinkle in red onion or red-pepper flakes?) The Definitive Guacamole Recipe

Ingredients1/2 white onion, minced 2 cloves garlic, minced 1/2 tsp. kosher salt, plus more to taste 3 ripe, Fresh California Avocados, seeded, peeled and diced 2 limes, juiced 1 jalapeño, stemmed, seeded and minced, (if you want more heat, leave seeds in) 1 tomato, medium, minced 1/3 cup fresh cilantro, chopped 1/8 tsp. freshly ground black pepper, or to taste
- In a medium bowl, mix the onion with the garlic and salt to combine. Use a fork to mash the mixture slightly to release the flavors and soften the texture.
- Add the avocados and lime juice, and mash the mixture until the ingredients are combined but still coarse. There should still be big chunks of avocado in it.
- Stir in the jalapeño, tomato and cilantro, and mix to combine. Season the guacamole with salt and pepper to taste. Serve immediately.
Serving Suggestion: Enjoy with baked chips, fresh vegetables tortilla chips or sweet potato fries.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
