Ingredients
12 slices thick deli turkey 1 ripe, Fresh California Avocado, seeded, peeled and mashed 1 red bell pepper, seeded and cut into strips 1 cucumber, seeded and cut into thin strips 1 cup sprouts or greens of choice 2 scallions, thinly sliced 1/2 cup pepperoncini ringsInstructions
- On a parchment paper lined baking sheet, arrange turkey slices into three or four rows, being sure to overlap the slices so you can roll them up.
- Spread the mashed avocado evenly across the turkey slices and layer on the remaining ingredients.
- Carefully, using the parchment paper to get a tight roll, roll the whole thing into a “log” shape.
- Slice into individual pinwheels, about 1-in. apart, using toothpicks to hold them together and for serving.
Serving Suggestion: Serve as an afternoon snack with a salad or additional greens of choice.
Beverage Pairing: Tall glass of sparkling water.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
