Whipped California Avocado Yogurt Power Parfait is the ultimate hearty breakfast when you’re on the go. A four-layer parfait made with whipped California Avocados and yogurt, cubed avocados, blistered tomatoes and extra creamy avocados. You can make the tomatoes in advance and layer them into your parfait when ready for an even speedier breakfast. The whipped avocado yogurt layer is slightly tangy, with a touch of heat from the infused chili oil and is ultra-creamy from the fresh California avocados.

Whipped California Avocado Yogurt 1/2 ripe, Fresh California Avocado, seeded and peeled 1/2 cup Greek yogurt 1/8 tsp. chili oil, or to taste Whipped California Avocado Yogurt Power Parfait 1 tsp. olive oil 1 cup cherry tomatoes 1/8 tsp. sea salt, or more to taste Whipped California Avocado Yogurt (see make-ahead recipe above) 1/2 ripe, Fresh California Avocado, seeded, peeled and cubed

  1. Add all the ingredients into a blender and blend till creamy. Set aside until ready to serve.

Whipped California Avocado Yogurt Power Parfait

  1. In a small saucepan, add the olive oil, cherry tomatoes and salt. Cook on medium-high heat, stirring frequently, for 10 minutes, or until the tomatoes have blistered.
  2. In a glass, add Whipped California Avocado Yogurt and top with a layer of cubed avocados, followed by blistered tomatoes and topped again more cubed avocados.

Variations: Swap the Greek yogurt for coconut yogurt. And skip the chili oil if you’re sensitive to heat.

Serving Suggestion: This recipe can be prepared separately ahead of time (be sure to store the yogurt and avocado mix in an airtight container and give a quick stir to minimize any oxidation that may have occurred) and put together quickly for those on the go!

Beverage Pairing: Enjoy with a sparkling lemon water for a light and fresh meal.

 

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
