Ingredients
2 tsp. coconut oil 2 cloves garlic, minced 1 sweet potato, medium, peeled and spiralized or thinly sliced 1 zucchini, sliced thin or spiralized 2 eggs 1 ripe, Fresh California Avocado, seeded, peeled and diced 1/8 tsp. salt, or to taste 1/8 tsp. pepper, or to taste 1/2 tsp. hot sauce, or to tasteInstructions
- Preheat 1 tsp of coconut oil in a large skillet over medium heat
- Add garlic, sweet potato and zucchini
- Stir and cook for 5-7 minutes or until vegetables are tender
- Push vegetables over to the side of the skillet, add the additional teaspoon of coconut oil
- Once the oil is heated, add 2 eggs and scramble
- When the eggs are scrambled, stir together with the cooked vegetables
- Top with diced California Avocados, salt, pepper and hot sauce
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
