A simple wholesome recipe full of veggies and good things to start your day!

2 tsp. coconut oil 2 cloves garlic, minced 1 sweet potato, medium, peeled and spiralized or thinly sliced 1 zucchini, sliced thin or spiralized 2 eggs 1 ripe, Fresh California Avocado, seeded, peeled and diced 1/8 tsp. salt, or to taste 1/8 tsp. pepper, or to taste 1/2 tsp. hot sauce, or to taste
  1. Preheat 1 tsp of coconut oil in a large skillet over medium heat
  2. Add garlic, sweet potato and zucchini
  3. Stir and cook for 5-7 minutes or until vegetables are tender
  4. Push vegetables over to the side of the skillet, add the additional teaspoon of coconut oil
  5. Once the oil is heated, add 2 eggs and scramble
  6. When the eggs are scrambled, stir together with the cooked vegetables
  7. Top with diced California Avocados, salt, pepper and hot sauce
