Korean cuisine is a growing part of California culture. This recipe for Korean Guacamole combines just a few of the favorite flavors from a Korean kitchen with creamy California Avocados for a deliciously unique dish.

4 Fresh California Avocados peeled, seeded and mashed 2 tsp. fresh lemon juice 2 cloves garlic, minced 2 Tbsp. green onions, minced 1 tsp. gochuchan chile paste, or to taste 2 tsp. Korean red pepper seasoning 1/2 tsp. sea salt, or to taste 1 Tbsp. sesame seeds, toasted if preferred 1/4 cup kimchi, chopped, optional
  1. Gently combine avocados, lemon juice, garlic, onions, chile paste and red pepper seasoning.
  2. Taste and adjust seasonings or add salt to taste.
  3. Sprinkle with sesame seeds and serve immediately.

Serving Suggestion: As shown in the photo, serving this guacamole Korean family style is a great way to let everyone customize the flavors to their personal taste. Place the mashed avocados in a bowl in the center and surround with little dishes of the other ingredients to stir in. Serve with thin Korean pickles, dried seaweed sheets or shrimp chips.

Beverage Pairing: Korean beer.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
