1 1/2 ripe, Fresh California Avocados, seeded and peeled 1/2 cup Greek yogurt, plain, nonfat 1 cup chicken, cooked and cubed or shredded 1/2 tsp. salt 1/8 tsp. pepper 1/2 tsp. garlic powder 1/4 tsp. curry powder, optional 1/2 cup celery, chopped 1/4 cup red onion, diced 1/4 cup grapes, chopped 1/4 tsp. fresh lime juice 2 flour tortillas, large (burrito size)

(Makes 2 large wraps)

  1. Scoop one avocado into a bowl and mash with fork
  2. Stir in Greek yogurt
  3. Fold in chicken, salt, pepper, garlic powder and curry powder
  4. When combined, add celery, onion, grapes and lime juice
  5. Spread mixture onto tortillas
  6. Slice half avocado and spread on top and roll up
  7. Slice in half and serve
  8. Leftovers store well in the refrigerator in air-tight container

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
