Ingredients
1 1/2 | ripe, Fresh California Avocados, seeded and peeled | |
1/2 | cup | Greek yogurt, plain, nonfat |
1 | cup | chicken, cooked and cubed or shredded |
1/2 | tsp. | salt |
1/8 | tsp. | pepper |
1/2 | tsp. | garlic powder |
1/4 | tsp. | curry powder, optional |
1/2 | cup | celery, chopped |
1/4 | cup | red onion, diced |
1/4 | cup | grapes, chopped |
1/4 | tsp. | fresh lime juice |
2 | flour tortillas, large (burrito size) |

Instructions
(Makes 2 large wraps)
- Scoop one avocado into a bowl and mash with fork
- Stir in Greek yogurt
- Fold in chicken, salt, pepper, garlic powder and curry powder
- When combined, add celery, onion, grapes and lime juice
- Spread mixture onto tortillas
- Slice half avocado and spread on top and roll up
- Slice in half and serve
- Leftovers store well in the refrigerator in air-tight container
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
