This bright and flavorful ceviche is packed with chunks of ripe, Fresh California Avocados, fresh shrimp “cooked” in lime juice, sweet mango chunks and other mouthwatering flavors!

1 lb. medium-sized shrimp (about 41-60 per pound), peeled and deveined 3 limes, juiced 1 small mango, peeled and cubed 2 Roma tomatoes, diced 1/2 small white onion, diced 1 jalapeño, seeded and diced 4 cloves garlic, minced 1/2 cup freshly chopped parsley 1/8 tsp. salt, to taste 1/8 tsp. pepper, to taste 1/2 tsp. chipotle powder 1 ripe, Fresh California Avocado, seeded, peeled and cubed
  1. Add shrimp and lime juice to a large bowl, cover and allow shrimp to marinate for 45 minutes to an hour and a half, or until they are pink and opaque. The size of your shrimp determines how long this process takes.
  2. While the shrimp is marinating, add mango, tomatoes, onion, jalapeño, garlic, parsley, salt, pepper and chipotle powder to a separate bowl. Toss the ingredients to combine and refrigerate until shrimp are ready.
  3. Once the shrimp is done marinating, drain the lime juice and cut shrimp into small pieces. Add them to the bowl with the other ingredients and add in the freshly cubed avocado to the mix.
  4. Gently toss the ceviche with a rubber spatula to combine all ingredients. Add more salt and pepper to taste.

Serving Suggestion: Serve as an appetizer with tortilla chips or crackers.

Beverage Pairing: Pair with a crisp, refreshing white wine like Pinot Grigio or a fun summer cocktail like a margarita or mojito.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
