This recipe’s creamy California Avocados along with carrots, blue cheese and hot sauce make for flavorful Buffalo-style spin on a traditional avocado toast recipe.

4 slices bread (your favorite type) 1/8 tsp. olive oil, or to taste 2 ripe, Fresh California Avocados, seeded, peeled and mashed 1 1/2 cups shredded or diced chicken 1/2 cup crumbled blue cheese 2 stalks celery, diced 2 small carrots, diced or cut into rounds 1/2 tsp. hot sauce, (your favorite) to taste 1 scallion, thinly sliced for garnish 1/8 tsp. flaked sea salt, to taste 1/8 tsp. red pepper flakes, to taste, optional
  1. Lightly brush bread with olive oil and place into a toaster oven or under the broiler in your oven. Watch carefully and toast to your liking.
  2. Add one half avocado, sliced, to each piece of toast. Using a fork, lightly smash the avocado across the toast. Alternatively, you can smash the two full avocados in a bowl, first, then spread onto the toast.
  3. Top the avocado toast with the chicken, if using, then evenly sprinkle on the blue cheese crumbles, celery, carrots and drizzle with as much hot sauce as you’d like.
  4. Garnish with scallions and sprinkle with flaked sea salt and red pepper flakes for extra heat, if you’d like.

Serving Suggestion:  To add extra flavor and for sauce lovers dipping or drizzling the toast in ranch would be a great traditional addition.

Beverage Pairing:  A tall glass of water.
