California Avocado Shrimp Po’Boy

12 soft baguettes, 5"-6" long Tempura Fried Shrimp (recipe follows) 12 green leaf lettuce leaves (12 oz.) 36 tomato slices (18 oz.) 24 pickle spears 6 ripe, Fresh California Avocados, peeled, seeded* 1 Tbsp. lime juice Escabeche (recipe follows) Sriracha Mayo (recipe follows) Tempura Fried Shrimp

48 shrimp, 21-25 count per pound, tails removed 4 cups cake flour (14 oz.) 4 cups beer (lager) 2 Tbsp. salt Oil for frying Escabeche
(Yield: 6 cups)
2 1/4 cups julienned carrot (7 ½ oz.) 2 1/4 cups slivered red onion (9 oz.) 1 1/2 cups julienned red bell pepper (6 oz.) 3/4 cup julienned poblano pepper (3 oz.) 3 cups apple cider vinegar 1 1/2 cups water 2 Tbsp. pickling spice 2 Tbsp. salt Sriracha Mayo
(Yield: 1 ½ cups)
1 cup mayonnaise 4 Tbsp. sriracha 2 Tbsp. lemon juice 2 Tbsp. honey

Escabeche:

  1. Place vegetables in a glass bowl or jar. Bring vinegar, water, pickling spice, and salt to a boil. Pour the vinegar mixture over the vegetables and let mixture cool. Cover and refrigerate until needed.

Sriracha Mayo:

  1. Mix all ingredients together in bowl. Cover and refrigerate until needed.

Tempura Fried Shrimp:

  1. Heat oil in a deep fryer to 375°F. Mix the cake flour and salt together in a large bowl, then add the cold beer and stir to combine.
  2. Per order, dip 3-4 shrimp into the batter, and fry for about 3 minutes until golden brown. Remove from fryer and drain on paper towel lined tray.

Assemble, per order:

  1. Place half of an avocado in a small bowl with ¼ tsp lime juice and salt to taste. Mash together with a fork and spread onto top of bun.
  2. Spread 2 tablespoons of Sriracha Mayo onto each bottom bun. Top with 1 lettuce leaf, 3 tomato slices, and ½ cup Escabeche. Top with 3-4 tempura fried shrimp and then the top bun. Cut in half and serve with 2 pickle spears.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
