Greek Guacamole

Serves: 12
  California Avocados
Tbsp.  fresh lemon juice
oz.  cherry tomatoes, cut in half or quarters if large
oz.  finely diced hot house cucumber, seeded (do not peel)
oz.  finely chopped red onion
oz.  pitted Kalamata olives, chopped
oz.  finely crumbled Feta cheese
tsp.  chopped, fresh marjoram or oregano

As with all fruits and vegetables, wash avocados before cutting. Check out our tips for how to choose and use California Avocados


  1. Coarsely mash (DO NOT PUREE) California avocados; stir in lemon juice. Fold in remaining ingredients. Serve with toasted pita bread.
  2. Guacamole is best made as close to service as possible. Store in an airtight container with plastic wrap against the surface.
