Here’s a quick and easy vegetable salad that tastes like a loaded backed potato but is made with fresh broccoli florets and creamy California Avocados. With only seven ingredients, this salad does so much at providing deliciousness and nutrition at the same time. Enjoy this knowing you are getting almost 100% of your vitamin C need (90% DV), plus 50% vitamin K (50% DV), 40% folate and vitamin B5, 20% DV potassium and vitamin E.

4 cups broccoli florets, cut in bite-sized pieces 2 Tbsp. minced red or green onions 1/4 cup shredded Cheddar cheese 1/4 cup chopped bacon pieces 2 ripe, Fresh California Avocados, seeded, peeled and diced 1/2 cup ranch or jalapeno ranch dressing 1/4 small red onion, peeled and sliced
  1. In a large bowl, stir together the broccoli, onions, cheese and bacon; set aside.
  2. Reserve about ¼ of the avocado slices. In a separate bowl, mash the remaining avocado slices. Stir in the dressing until well blended, then fold into broccoli mixture until everything is well-coated with dressing.
  3. Arrange reserved avocado slices and red onion slices on top of the salad and serve immediately.

Serving Suggestion: If preparing in advance coat remaining avocado pieces with 1 Tbsp. olive or salad oil. Place plastic wrap directly on the surfaces of both the salad and the diced avocado; refrigerate. Combine just before serving.

Beverage Pairing: Iced Tea.
