Ingredients
2 Persian cucumbers, diced 1 cup shredded red cabbage 1 cup cooked edamame 8 orange and/or yellow mini bell peppers, stemmed and sliced in rings 1 cup coarsely chopped cooked artichoke hearts 1 1/3 cups chopped tomatoes 1 ripe, medium Fresh California Avocado, peeled, seeded and diced 3 Tbsp. fresh citrus juice (lemon and/or orange or lime)* 2 Tbsp. Extra virgin olive oil 1 Tbsp. country Dijon or spicy mustard 1 clove garlic, minced 8 leaves fresh basil, minced 1/4 tsp. cracked black pepper, or more to taste As needed Salt to tasteInstructions
- Layer the cucumbers, cabbage, edamame, peppers, artichoke hearts and tomatoes in 12 fl. oz. glass jars
- Sprinkle a little of the juice on the diced avocado to coat. Place avocado on top of the tomatoes.
- Place the remaining juice and ingredients in a small jar with a lid; shake until well-blended. Pour dressing over each of the layered salads. Seal with jar lid and serve.
*You can make the dressing sweeter or more tart to your liking depending on which citrus juice you use.
Serving Suggestion: Gently invert sealed jars a couple of times to coat the salad with dressing. Serve with long forks or chopsticks. Tossed salad variation: Toss salad ingredients with dressing and serve in Mason jars.
Individual snack salad variation: Place California Avocados and a small amount of dressing at the bottom of a small glass jar. Top with your favorite salad ingredients and seal with the jar lid until snack time, then gently shake and enjoy.
Beverage Pairing: Prosecco wine or sparkling water with lime.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
